Sunshine Almond Tofu

Ingredients yields : 15 servings)
  • 120 g almond flour

  • 180 g white sugar

  • 1/2 tsp almond extract

  • 1 L soy milk

  • 12 sheets gelatin (or the amount instructed on the product package)

  • 300 ml orange coulis

  • 300 ml cherry coulis

  • 16 strawberries

Realisation
  1. Mix the almond flour, white sugar, almond extract and soy milk together and bring to a boil, then remove it from heat;

  2. Soak the gelatin sheets in a bowl of cold water for 5-10 minutes or until softened;

  3. Squeeze out the excess water from the soaked gelatin, then add the soaked gelatine into the warm almond mixture (about 60ºC);

  4. Stir until the gelatin is fully dissolved;

  5. Pour the mixture into the mold and chill in the refrigerator for at least 4 hours or until fully set;

  6. Once set, cut the almond tofu into 15 pieces;

  7. Serve each piece with orange and cherry coulis, then top with half a strawberry;

  8. Enjoy!
