Stuffed Tofu

Ingredients yields : 8 servings)
  • 8 fried tofus

  • 250 g beef

  • 2 shiitakes

  • 4 shrimps

  • 15 ml soy sauce

  • 10 ml oyster sauce

  • 5 g sugar

  • 5 ml Zhenjiang black vinegar

  • 1/8 tsp salt*

  • 1/4 tsp ground black pepper

  • 1 egg

  • 30 ml vegetable oil

  • 25 cl broth

* Or more in the final seasoning if needed

Realisation
  1. Mince the beef, shiitakes and shrimps;

  2. Mix them with the soy sauce, oyster sauce, sugar, vinegar, salt, ground black pepper and the egg, stirring with a wooden spoon for 5 minutes;

  3. Cut each piece of tofu in half;

  4. Fill the tofus halves with the mixture;

  5. Heat the vegetable oil and brown the stuffed side of the tofu;

  6. Add the broth, bring to a boil;

  7. Cover, reduce the heat, let it simmer for 10 minutes;

  8. Taste and add more salt if necessary;

  9. Increase the heat and cook uncovered until the liquid reduces by half;

  10. Serve and enjoy!
