Soy Pudding with Ginger Syrup

Ingredients yields : 4 servings)
  • 50 cl soy milk

  • 30 ml cornstarch

  • 200 g brown sugar

  • 250 ml water

  • 10 g ginger

Realisation

Soy Pudding

  1. Mix the cornstarch with 60 ml soy milk;

  2. Pour the starch mixture into the remaining soy milk and mix well;

  3. Heat up the mixture while stirring, as soon as the mixture begins to thicken (at 95ºC), stop stirring and turn off the heat;

  4. Divide the mixture into serving bowls;

  5. Cover and let it sit in the fridge for 1 to 2 hours until set;

Ginger Syrup

  1. Slice the ginger;

  2. Mix the brown sugar, water and ginger together;

  3. Bring the mixture to a boil;

  4. Cover and simmer for 10 mins;

  5. Turn off the heat and let it cool to room temperature;

  6. Strain the mixture;

  7. Serve the douhua with the syrup. Enjoy!
