Soy Pudding with Ginger Syrup
Ingredients (yields : 4 servings)
50 cl soy milk
30 ml cornstarch
200 g brown sugar
250 ml water
10 g ginger
Realisation
Soy Pudding
Mix the cornstarch with 60 ml soy milk;
Pour the starch mixture into the remaining soy milk and mix well;
Heat up the mixture while stirring, as soon as the mixture begins to thicken (at 95ºC), stop stirring and turn off the heat;
Divide the mixture into serving bowls;
Cover and let it sit in the fridge for 1 to 2 hours until set;
Ginger Syrup
Slice the ginger;
Mix the brown sugar, water and ginger together;
Bring the mixture to a boil;
Cover and simmer for 10 mins;
Turn off the heat and let it cool to room temperature;
Strain the mixture;
Serve the douhua with the syrup. Enjoy!
