“SakuraLiving” Almond Tofu with Berry Coulis

Ingredients yields : 24 servings)
  • 120 g almond flour

  • 180 g caster sugar

  • 500 ml semi-skimmed milk

  • 500 ml heavy cream

  • 7 g agar-agar powder

  • 1 tsp almond extract

Realisation
  1. Dilute the agar-agar in 100 ml of milk;

  2. Mix the remaining milk, heavy cream, almond flour and sugar until well combined;

  3. Add the diluted agar-agar to the mixture;

  4. Bring the mixture to a boil, then simmer for 2 minutes;

  5. Add the almond extract and mix well;

  6. Pour the mixture into a 20 × 30 × 2 cm baking pan;

  7. Let it cool to room temperature, then chill in the refrigerator for at least 4 hours, until set;

  8. Cut the almond tofu into squares;

  9. Decorate the tofu with cherry blossoms, serve with red berry coulis, and enjoy!
