“SakuraLiving” Almond Tofu with Berry Coulis


Ingredients (yields : 24 servings)
120 g almond flour
180 g caster sugar
500 ml semi-skimmed milk
500 ml heavy cream
7 g agar-agar powder
1 tsp almond extract
Realisation
Dilute the agar-agar in 100 ml of milk;
Mix the remaining milk, heavy cream, almond flour and sugar until well combined;
Add the diluted agar-agar to the mixture;
Bring the mixture to a boil, then simmer for 2 minutes;
Add the almond extract and mix well;
Pour the mixture into a 20 × 30 × 2 cm baking pan;
Let it cool to room temperature, then chill in the refrigerator for at least 4 hours, until set;
Cut the almond tofu into squares;
Decorate the tofu with cherry blossoms, serve with red berry coulis, and enjoy!
