Mapo Tofu

Ingredients yields : 2 servings)
  • 250 g soft tofu

  • 250 g fatty pork (30% lipids)

  • 3 cl vegetable oil

  • 3 cloves of garlic

  • 5 dried red chili peppers

  • 3 cl doubanjiang

  • 5 ml Sichuan peppercorn powder

  • 3 sprigs of chives

  • 15 ml soy sauce

  • salt

  • 25 cl broth

  • 15 ml corn starch

  • 15 ml water

Realisation
  1. Cut the tofu into 2 cm cubes;

  2. Mince the pork;

  3. Mince the garlic;

  4. Mince the chives;

  5. Heat the pan, then add the oil;

  6. Add the dried chili peppers, sauté until fragrant, about 1 min;

  7. Add the garlic, sauté until fragrant, about 1 min;

  8. Add the porc, cook until browned, about 5 mins;

  9. Add the doubanjiang, Sichuan peppercorn powder, soy sauce, mix them well with the porc;

  10. Add the tofu;

  11. Add the broth;

  12. Bring the broth to a boil, lower the heat, cover and simmer for 10 mins;

  13. Taste and adjust the seasoning with salt to your liking, if necessary;

  14. Dilute the cornstarch in cold water, then add it to the sauce while stirring gently to thicken the sauce;

  15. Remove from heat, sprinkle with chives ;

  16. Serve and enjoy!
