Mapo Tofu
Ingredients (yields : 2 servings)
250 g soft tofu
250 g fatty pork (30% lipids)
3 cl vegetable oil
3 cloves of garlic
5 dried red chili peppers
3 cl doubanjiang
5 ml Sichuan peppercorn powder
3 sprigs of chives
15 ml soy sauce
salt
25 cl broth
15 ml corn starch
15 ml water
Realisation
Cut the tofu into 2 cm cubes;
Mince the pork;
Mince the garlic;
Mince the chives;
Heat the pan, then add the oil;
Add the dried chili peppers, sauté until fragrant, about 1 min;
Add the garlic, sauté until fragrant, about 1 min;
Add the porc, cook until browned, about 5 mins;
Add the doubanjiang, Sichuan peppercorn powder, soy sauce, mix them well with the porc;
Add the tofu;
Add the broth;
Bring the broth to a boil, lower the heat, cover and simmer for 10 mins;
Taste and adjust the seasoning with salt to your liking, if necessary;
Dilute the cornstarch in cold water, then add it to the sauce while stirring gently to thicken the sauce;
Remove from heat, sprinkle with chives ;
Serve and enjoy!
