Grünkohleintopf with Smoked Tofu

Ingredients (yields : 10 servings)
  • 200 g smoked bacon

  • 2 onions

  • 1 kg kale

  • 2 carrots

  • 500 g potatoes

  • 400 g smoked tofu

  • 1 tbsp butter

  • 1500 ml broth

  • 2 tbsp Senfsauce*

  • salt and pepper

    *German mustard sauce

Realisation
  1. Dice the smoked bacon;

  2. Clean and remove the tough stems of the kale, then chop the kale coarsely;

  3. Peel and slice the onion;

  4. Peel and slice the carrots;

  5. Peel and dice the potatoes;

  6. Slice the smoked tofu;

  7. Heat the butter in a large saucepan, add the diced bacon, and stir-fry until the fat is rendered and the bacon is crispy;

  8. Add the sliced onion and cook until softened, about 8 mimutes;

  9. Add the chopped kale, sliced carrots, diced potatoes, and a dash of salt; cook until the volume of the kale is reduced;

  10. Add the broth, bring to a boil, then simmer for 45 minutes;

  11. Add the smoked tofu and simmer for an additional 15 minutes;

  12. Add the Senfsauce and mix well;

  13. Taste and adjust the salt and pepper to your preference;

  14. Allow the stew to rest overnight in the refrigerator;

  15. Bring to a boil the next day before serving;

  16. Serve and enjoy!
