Grünkohleintopf with Smoked Tofu
Ingredients (yields : 10 servings)
200 g smoked bacon
2 onions
1 kg kale
2 carrots
500 g potatoes
400 g smoked tofu
1 tbsp butter
1500 ml broth
2 tbsp Senfsauce*
salt and pepper
*German mustard sauce
Realisation
Dice the smoked bacon;
Clean and remove the tough stems of the kale, then chop the kale coarsely;
Peel and slice the onion;
Peel and slice the carrots;
Peel and dice the potatoes;
Slice the smoked tofu;
Heat the butter in a large saucepan, add the diced bacon, and stir-fry until the fat is rendered and the bacon is crispy;
Add the sliced onion and cook until softened, about 8 mimutes;
Add the chopped kale, sliced carrots, diced potatoes, and a dash of salt; cook until the volume of the kale is reduced;
Add the broth, bring to a boil, then simmer for 45 minutes;
Add the smoked tofu and simmer for an additional 15 minutes;
Add the Senfsauce and mix well;
Taste and adjust the salt and pepper to your preference;
Allow the stew to rest overnight in the refrigerator;
Bring to a boil the next day before serving;
Serve and enjoy!
