Fried Stinky Tofu Changsha Style
Ingredients (yields : 8 servings)
8 cubes of Huogongdian stinky tofu*
camellia oil (enough for deep-frying the tofu)
30 ml broth
30 ml soy sauce
2 tsp sesame oil
2 cloves of garlic
1 tsp chili powder
1 tsp five-spiced powder
salt
2 sprigs of chives
5 sprigs of cilantro
*Huogongdian stinky tofu is synonymous with Changsha stinky tofu.
Realisation
Mince the garlic, chives and cilantro;
In a mini saucepan, add sesami oil and garlic, sweat the garlic on low heat until it is fragrant, then turn off the heat;
Add broth, soy sauce, chili powder and five-spiced powder, mix well then taste, add salt if necessary;
Heat the camellia oil to 180ºC in a deep fryer;
Fry the stinky tofu until crispy, then remove it from the oil and drain off the excess oil;
Drizzle the sauce prepared above and sprinkle the minced chives and cilantro on top;
Serve and enjoy!
