Fried Stinky Tofu Changsha Style

Ingredients yields : 8 servings)
  • 8 cubes of Huogongdian stinky tofu*

  • camellia oil (enough for deep-frying the tofu)

  • 30 ml broth

  • 30 ml soy sauce

  • 2 tsp sesame oil

  • 2 cloves of garlic

  • 1 tsp chili powder

  • 1 tsp five-spiced powder

  • salt

  • 2 sprigs of chives

  • 5 sprigs of cilantro

*Huogongdian stinky tofu is synonymous with Changsha stinky tofu.

Realisation
  1. Mince the garlic, chives and cilantro;

  2. In a mini saucepan, add sesami oil and garlic, sweat the garlic on low heat until it is fragrant, then turn off the heat;

  3. Add broth, soy sauce, chili powder and five-spiced powder, mix well then taste, add salt if necessary;

  4. Heat the camellia oil to 180ºC in a deep fryer;

  5. Fry the stinky tofu until crispy, then remove it from the oil and drain off the excess oil;

  6. Drizzle the sauce prepared above and sprinkle the minced chives and cilantro on top;

  7. Serve and enjoy!
