Wuzhou meidouzha belongs to the Neurospora type of fermented soy pulp products, and it is precisely Neurospora that is responsible for its distinctive color. Wuzhou meidouzha has a history of more than 400 years. However, it wasn't until contemporary times that the mold type active in its fermentation was confirmed through biochemical analysis. Before that, people only knew through experience that the formation of Wuzhou meidouzha was inevitably linked to the local environment: the same soy pulp, processed in the same way, would only succeed within a certain area. This indicates a significant regional specificity among the microorganisms involved in the fermentation process.
