Chocolate Pot de Crème with Soy Milk
Ingredients (yields : 2 servings)
100 g dark chocolate (chopped)
1 cup soy milk
3 tbsp granulated sugar
1 tbsp cornstarch
A pinch of salt
Realisation
Dissolve the cornstarch in 3 tablespoons of soy milk to make a slurry;
Bring the remaining soy milk and sugar to a simmer, stirring until the sugar dissolves;
Add the cornstarch slurry while whisking continuously, and continue to cook until the mixture thickens slightly, about 1-2 minutes;
Pour the hot soy milk mixture over the chopped chocolate, let it sit for about 1 minute, then stir until the chocolate is fully melted and the mixture is smooth;
Divide the mixture into dessert cups;
Chill in the refrigerator for 4 hours;
Serve and enjoy!
