Chocolate Pot de Crème with Soy Milk

Ingredients yields : 2 servings)
  • 100 g dark chocolate (chopped)

  • 1 cup soy milk

  • 3 tbsp granulated sugar

  • 1 tbsp cornstarch

  • A pinch of salt

Realisation
  1. Dissolve the cornstarch in 3 tablespoons of soy milk to make a slurry;

  2. Bring the remaining soy milk and sugar to a simmer, stirring until the sugar dissolves;

  3. Add the cornstarch slurry while whisking continuously, and continue to cook until the mixture thickens slightly, about 1-2 minutes;

  4. Pour the hot soy milk mixture over the chopped chocolate, let it sit for about 1 minute, then stir until the chocolate is fully melted and the mixture is smooth;

  5. Divide the mixture into dessert cups;

  6. Chill in the refrigerator for 4 hours;

  7. Serve and enjoy!
