Almond Tofu with Ginger Syrup

Ingredients yields : 12 servings)
  • 120 g almond flour

  • 180 g white sugar

  • 1 L almond milk

  • 7 g agar agar

  • 120 ml ginger syrup

  • 60 ml lemon juice

  • candied apricot

Realisation
  1. Dilute agar agar with 100 ml almond milk;

  2. Mix the remaining almond milk, almond flour and white sugar together well;

  3. Add the diluted agar agar to the mixture;

  4. Bring the mixture to a boil, then simmer for 2 minutes;

  5. Divide the mixture into 12 serving containers;

  6. Chill them in the refrigerator until set;

  7. Serve with 2 tsp of ginger syrup, 1 tsp lemon juice and candied apricot;

  8. Enjoy!
