Almond Tofu with Ginger Syrup
Ingredients (yields : 12 servings)
120 g almond flour
180 g white sugar
1 L almond milk
7 g agar agar
120 ml ginger syrup
60 ml lemon juice
candied apricot
Realisation
Dilute agar agar with 100 ml almond milk;
Mix the remaining almond milk, almond flour and white sugar together well;
Add the diluted agar agar to the mixture;
Bring the mixture to a boil, then simmer for 2 minutes;
Divide the mixture into 12 serving containers;
Chill them in the refrigerator until set;
Serve with 2 tsp of ginger syrup, 1 tsp lemon juice and candied apricot;
